THE ROLE
As Lead Cook / Sous Chef, you will be responsible for running kitchen operations during service, ensuring the team delivers consistent, efficient, and well-organised output across all areas.
Key responsibilities include:
- Leading service across dine-in and takeaway operations
- Managing workflow during high-volume periods and group service
- Cooking and managing fryer and hot food sections
- Maintaining consistency, portion control, and food quality
- Supporting and directing kitchen hands and junior staff
- Assisting with prep, stock control, and organisation
- Ensuring a clean, safe, and well-structured kitchen
This is a hands-on role, where you will lead from the front and take control during busy service periods.
WHAT YOU NEED
- Experience as a Sous Chef, Lead Cook, or strong cook ready to step up
- Experience filleting fresh fish and seafood
- Ability to run a fast-paced kitchen and stay organised under pressure
- Experience in high-volume, takeaway, or casual dining environments
- Strong understanding of timing, workflow, and efficiency
- Ability to lead a small team and maintain standards
- Good communication and reliability
Highly regarded:
- Fryer / fish & chip experience
- Experience catering for groups or large bookings
